    Hello everyone, dear readers. Today we will talk about the seasonal dish, but thanks to the pickling process invented many years ago, it is ranked among the loved and revered all year round. And not just like that, because no one has canceled the snack yet and it is needed at any time of the year. Today we marinate the zucchini with rolls. Simple, quick and very impressive looks. And if you have a holiday every day, then it is even more so for you, because pickled zucchini rolls will decorate any table, regardless of the season and weather. And who invented them so tasty and beautiful to cook? This question will be answered by our permanent heading "dish history"

    History of the dish:

    Pickling is one way of preserving food. Pickling occurs through the action of acid, which prolongs the life of some products due to the suppression of the vital activity of various microorganisms that cause putrefaction and decomposition. During the preservation process, herbs, spices and, of course, aromatic additives with essential oils in the form of onions and garlic are also added to enhance the taste and aroma.

    Often honey or sugar is also added to the marinades for a change. The result sometimes surpasses the wildest expectations and reveals the taste of well-known products in a new way. And just then, when ordinary cucumbers and tomatoes are already pretty fed up, products that are outlandish in appearance and combinations are used. One and the same variation on the theme - pickled zucchini rolls prepared for the winter, which we are happy to talk about today.


    • Zucchini - 700 g
    • Carrots - 300 g
    • Garlic - 2 teeth.
    • Bay leaf - 2 pcs.
    • Black peppercorns - 10 pcs.
    • Dill - 4 branches
    • Marinade:
    • Water - 1 l
    • Sugar - 2 tablespoons
    • Coarse salt - 1 tablespoon
    • Vinegar (9%) - 100 ml


    1. Cooking ingredients. We clean zucchini, garlic, carrots. My vegetables and herbs.

      To begin with, we will prepare the necessary products: we will wash, clean and cut everything if necessary

    2. Cut the zucchini into wide strips with a vegetable peeler.

    3. Cut the carrots into strips with a vegetable peeler.

    4. We take one tape of carrots, twist it into a roll, wind a tape of zucchini on top. We do this with all the zucchini and carrots.

    5. Put finely chopped garlic, peppercorns, bay leaves and dill in sterilized jars. Distribute rolls-blanks evenly between the banks, put them tightly.

    6. Prepare the marinade: add salt, sugar, vinegar to a pot of water. Bring to a boil.

      For the marinade in a saucepan with water, mix salt, granulated sugar and, of course, vinegar. Bring the marinade to a boil

    7. Pour the jars filled with rolls with hot marinade, cover with styrylized lids.

    8. We put the cans in a pot of water, put on the fire, after boiling the water in the pot, we sterilize the cans with zucchini for 10 minutes.

      Place the cans in a pot of water and bring it to a boil. Sterilize the jars in boiling water for about 10 minutes

    9. We take the cans out of the pan and roll up the seaming lids with a key. We turn the banks over, leave them overnight.

      We remove the ready-made jars from the water and roll them up, and then turn them over on the lids and leave them warm until they cool completely

    10. We send for storage.

    The benefits of the dish:

    The use of pickled blanks is very dubious. Although it is perfectly possible to use fruit vinegar, which people even drink for health. Thus, marinating zucchini for the winter with rolls and other similar recipes will become many times more interesting and even healthier.
