A delicious, sweet, aromatic and surprisingly healthy dessert for the soul, which everyone has heard about, but not many are prepared. In the review, we will tell you more about the dessert itself, talk about the features of its preparation and possible variations of the recipe. And then, of course, together we will cook a delicious berry tart and feed all our relatives. But this is later, but for now a little history.

    History of the dish

    Translated from French, the name of this dessert is nothing more than an ordinary pie. This cake really has a number of distinctive features that make it very authentic, namely:

    • this cake is always open;
    • it is prepared only from shortcrust pastry;
    • it is most often baked in a special form with a corrugated edge or simply on a baking sheet, like pizza;
      such tarts can be large or small and the latter, by the way, are called tartlets.

    Regarding the birthday of this wonderful dessert, only one thing can be said with certainty - shortbread doughs began to be used around 1550, although the early pies were still mainly filled with hearty meat and fish fillings. Later, the cuisine became sophisticated and tarts with fruit and creamy insides appeared. Almost everything that is available to your imagination and wallet is used as a modern filling for such a pie. From fruits and berries to fish, meat and jellied creams. At the same time, several fillings can be combined in one product at once, for example, make berry tart with meringue or chicken tart with egg filling. In general, experiment and you will be happy. Well, we talked about the recipe, and now we are preparing the berry tart with cottage cheese.

    Ingredients:

    • Flour - 300-350 g
    • Egg - 2 pcs.
    • Baking powder - 1 tsp
    • Sugar - 250 g
    • Butter - 150 g
    • Sour cream - 200 g
    • Cottage cheese - 100 g
    • Any frozen berries - 300 g
    • Lemon (zest) - 1 pc.

    Preparation:

    1. In preparation, you can use not only frozen berries, but also fresh ones are perfect. Fresh berries must be prepared appropriately: sort and wash. Frozen ones do not require any preparation, they do not even need to be thawed. The oil must be put on the kitchen table in about an hour, so that the product is already sufficiently softened to work.

      First, let's prepare the berries and butter. Wash or defrost the berries, and just put the butter on the table and give it an hour to warm up.

    2. Put sugar (100 g) into a spacious bowl, beat in one egg, put cubes of soft butter.

    3. Start the mixer at maximum power and turn these ingredients into a homogeneous mass.

    5. We begin to knead the dough with a spoon, continue with our hands. The final dough is soft and comfortable to work with.

    6. We will form a base from the prepared dough, carefully rolling it into a layer, which we will transfer to the bottom of the mold (I have a split mold diameter of 21 cm). Use our fingers to form the sides (3-4 cm high), prick the horizontal surface of the dough base with a fork.

    7. Very quickly prepare the sour cream and curd filling. Put cottage cheese in a bowl, add sugar (150 g), add sour cream, beat in an egg, add lemon zest.

    8. It is very convenient to use an immersion blender at this stage, lower it vertically into a bowl, turn it on at minimum power and turn all the ingredients into a homogeneous sour cream-curd filling.

    9. At the bottom of the dough base, lay out frozen berries in an arbitrary layer - I have blueberries and raspberries in equal amounts in my work.

      10) On top of the berries, distribute the sour cream and curd filling. We will bake the pie for 40-45 minutes in the oven at 180 degrees.
