    History

Could you imagine, for instance, that a peach belongs to the rose family (Rosaceae), subgenus of almond? In fact, peach and almond are really alike, the only difference is their fruits. The origin of a peach is unknown yet but it’s thought to be very similar with a species called Prunus davidiana Franch which is either a type of the wild growing form of the peach or, at least, has too much in common with it. One of the first places where the peach tree has grown was North-Eastern regions of India and Persia later. Furthermore, for the first time in Europe the peach tree was planted in Italy approximately in the middle of the first century A.C.

    Heath enhancing features of peaches

Peaches contain organic acids (malic, quinic, citric, tartaric etc.), vitamin C, calcium, potassium, cuprum, iron, provitamin A, B-group vitamins, essential oil and other health enhancing compounds including pectin. Also they are rich with carotene. Moreover, these fruits have a laxative and diuretic effect. The organic acids  and essential oil contained in the fruit pulp can easily stimulate gastric secretion, improve your digestion and increase your appetite.

A huge number of minerals (iron, cuprous etc.) make it a great element for treatment of gastritis or anaemia. The peach pulp actually has a lot of potassium salt that are really good to cope with problems like cardiac arrhythmias and other heat diseases. It’s suggested to consume peaches as effective preventive means against infectious diseases, colds and vitamin deficiency. Generally, these juicy fruits  have adaptogenic effect. In other words, they help our body to adapt and protect ourselves from rather destructive influence of the environment. These are the peaches - healthy and yummy fruits which are the basis of our   new peach pie recipe today.

    Ingredients

    • 2 oz. of milk
    • 180 grams of wheat flour
    • 160 grams of butter
    • 180 grams of sugar
    • 3 eggs
    • 1-2 peaches
    • 1 tsp. baking powder

    Preparation

    1. First, break the eggs into the deep bowl. It’s better to take them out of the fridge half and hour prior to the preparation so that you do not use cold ones.

Break the room temperature eggs into the bowl.

    2. Then pour the milk into that bowl. The milk shouldn’t be very cold as well, at room temperature is better. That’s very important because when we will add the butter to the milky-butter mixture the butter will mix easily with other ingredients.

Add the eggs (prior taken out of the fridge) to the bowl with milk.

    3. Then whip the eggs with milk.

The eggs and milk go mixed up a high speed with the whipping mixer.

    4. Now it’s time to add some butter. As you see now, the butter also needs to be taken out of the fridge prior because the cold butter will be hard to mix with milky-butter mixture.

      Now add soft butter.

    5. Then add some sugar to the mixture leaving 2 tablespoons of it for the next step of scattering it over the pie.

      Sip 2 tablespoons of sugar.

    6. Whip all the contents of the bole with the mixer at high speed. You will see some bubbles revealing themselves on the surface.

All the ingredients need to be thoroughly whipped until the bubbles appear o the surface of the dough.

    7. Finally, it’s time to add the wheat flour and baking powder. That’s exactly what we’re going to do now.

Sip the flour and baking powder into the bowl with dough.

    8. Mix it all thoroughly, and such a dense and smooth dough is what we’ve got now.

Whip all the contents of the dough one more time until you got a dense homogenous mixture.

    9. Then place the dough from the bowl to the baking dish, and don’t forget to grease the dish with butter before doing it.

Grease the bottom of the baking dish with butter and put the dough into it.

    10. Peel the peaches (or only just one big, like ours), take the peach seeds out and cut them into slices as shown on the picture.

Peel the peaches and cut them into slices.

    11. Place the slices of peach onto the dough in random order or somehow particularly. Check it out how we did it on the picture. Looks great, isn't it?  It actually looks like butterfly waving its wings that is about to fly away.

Place the slices of peaches the way you like on the pie.

    12. Put it into oven for like 25 minutes. It should be preheat to 350F.

Heat the oven beforehand and leave the pie there for 25 minutes.

    13. Take the dish out of the oven, scatter it with the leftovers of sugar and put it back into the oven for 10-15 minutes now.

Get it out of the oven, scatter it with sugar and place it back for 10 minutes so that the pie can caramelize.

    14. You can easily check whether your pie is cooked using a wooden toothpick. So, what we’ve got here is the sunny and yummy peach pie. Bon appetite!

Check the way it’s cooked with a wooden toothpick and if it is - go and put it on your table!
