Today, I would not like to disturb the name of the infamous chef Olivier again, who died without revealing to anyone the true recipe for his wonderful salad. From the two recipes that have survived to our times, which have received the status of being as similar as possible to the original, we learn the main thing: the unchanged ingredients of the salad were the meat component due to grouse and seafood in the form of crayfish necks.

    Is it really nothing to do with what is commonly called Olivier salad today? Expensive salad necks completely disappeared - with the advent of the Bolsheviks, there was simply nowhere to take them, but the hazel grouses were easily replaced first with ordinary meat, and then completely with sausage. This means that our recipe and the lean Olivier itself will not become a gross culinary mistake, but will turn into another variation. And who knows, maybe you will find it even tastier.

    Ingredients:

    • Canned peas - 200 g
    • Fresh champignons - 250 g
    • Lenten mayonnaise - 200 ml
    • Potatoes - 4-5 pcs.
    • Pickled cucumbers (pickled) - 3-4 pcs.
    • Carrots - 2 pcs.
    • Salt - to taste
    • Ground black pepper - to taste
    • Fresh parsley - to taste
    • Vegetable oil - 3 tbsp.

    Cooking:

    1. Prepare the ingredients, wash everything.

    2. Put the potatoes and carrots to cook until cooked.

    4. Heat the vegetable oil in a frying pan, put the mushrooms and fry them until golden at maximum heat.

    6. In a salad bowl, put the carrots and potatoes, cut into small cubes.

    10. Divide the finished salad into portioned plates, into which we add finely chopped parsley to taste, serve.

    Frankly, I see little benefit in such salads. Yes, that's just a lean recipe or not, but Olivier salad has been our love since childhood.
