    Good afternoon, dear readers. We are happy to welcome you on the pages of HozOboz and will be happy to share a new recipe. Today our hero is a Georgian salad with cucumbers. This is the case when a very unusual creation is obtained from the most common products. We all pickle cucumbers, salt them and even prepare different salads from them, but you hardly dared to harvest them for the winter in such an outlandish way as this one. And today we will do nothing more than pickle cucumbers in tomato puree and call it all a cucumber salad in Georgian. But first, let's turn to history.

    History of the dish

    Georgian cucumber salad is a spicy Georgian appetizer. Its distinctive feature is fresh taste and incredible aroma. If everything is done correctly, such a salad will decorate any feast and become a real holiday. You will meet it in any restaurant of Georgia. And once you have tasted it, you can easily turn a salad, of which cucumbers are a part, into the one that everyone will recognize by the first chords in β€œGeorgian for the winter”. Please note that it should not be confused with others because there is also a Georgian salad of which not only tomatoes and cucumbers, but also nuts are a part. We will talk about it in the next reviews, but for now let's get down to the preparation.

    Ingredients:

    • Cucumbers - 1 kg
    • Tomatoes - 800 g
    • Chili pepper - 1 pc. (15 g)
    • Salt - 2 tsp
    • Sugar - 1 tablespoon
    • Vinegar 9% - 50 ml
    • Garlic - 1 head
    • Vegetable oil - 100 ml

    Preparation:

    1. Let's prepare the ingredients. We will wash the vegetables, peel the garlic and chili peppers, sterilize the jars and lids in a convenient way.

      To prepare a Georgian salad of cucumbers and tomatoes, you need to prepare the necessary products: garlic, chili, tomatoes and of course the cucumbers themselves

    2. Cut the tomatoes crosswise, pour boiling water over for 30 seconds.

      To begin with, cut the tomatoes and fill them with boiling water for a minute

    3. Remove the skin from the tomatoes.

      Peel the tomatoes

    4. Put the tomatoes in a saucepan and punch with a blender.

    5. Cut the cucumbers into slices.

    6. Chop the garlic and chili.

      Meanwhile, grind the chili and garlic

    7. Put the saucepan with tomato on the stove, add salt, sugar, vinegar, vegetable oil, bring to a boil. Add garlic and pepper, mix.

    8. Put the cucumbers. We will simmer for 10 minutes over low heat, stirring occasionally.

      Now we put the cucumbers to the Georgian cucumber salad for the winter and simmer in the sauce for about 10 minutes, stirring

    9. Put the hot salad in sterilized jars.

    10. Roll up the lids, turn it upside down, leave it overnight, and in the morning send it to the pantry for storage.
