But before we start preparing cranberry jelly, by tradition, let's dwell a little on the history and features of this wonderful drink-dessert.

    History of the dish

    Kissel is a traditional Russian thick drink, which is prepared on the basis of fruits or berries and, due to the addition of starch, has the consistency of poorly frozen jellied meat. Historical evidence suggests that the first mention of jelly dates back to the 13th century, and nevertheless then jelly was not so much as desserts, they rather resembled sour soup or sauce. It was extremely difficult to drink them, because the consistency was too thick, like that of a chlodz, and more often the jelly was cut into pieces and yalu by hand.

    The difference between them was that jellied meat was cooked on an animal gelling substance, and jelly with the addition of starch. And the jelly was not jelly: pea, rye or oatmeal. Kissel, in its usual form, appeared only by the 19th century, then they began to prepare it on the basis of juices with the addition of various delicacies. This is what they do now. It is such a cranberry jelly from starch that we will cook and we are with you today.

    Ingredients:

    • Frozen cranberries - 150 g
    • Sugar - 80 g
    • Water - 800 ml
    • Starch - 2 tablespoons

    Cooking cranberry jelly:

    1. Let's prepare the ingredients. Defrost the cranberries in advance.

      To prepare Russian cranberry jelly, first prepare the cranberries: if necessary, defrost, wash, etc.

    2. Rub the berries through a sieve.

    3. Put the cranberry cake in a saucepan, add 700 ml of water, bring it to a boil and immediately remove it from the stove.

      To get juice from the cake, put it in a saucepan, pour 700 ml of water into it and bring to a boil, and then remove from heat

    4. Pour the juice into a clean container.

      We will drain the prepared juice into an empty bowl

    5. Strain the contents of the saucepan, getting rid of the cake. We will pour the strained fruit drink into the saucepan.

    6. Add sugar. Let's put it on the stove.

      Now, sugar must be added to the cranberry jelly, which, recall, we prepare from frozen cranberries

    7. Pour 100 ml of water into a mug and add starch, mix until smooth.

      In a cup, mix thoroughly 100 ml of water and starch

    8. Wait until the cranberry juice boils in a saucepan, reduce the heat and pour a thin stream of the starch mixture, stirring constantly, wait until the mixture thickens, remove from the stove.

      As soon as the fruit drink in the pan boils, pour the dissolved starch into it and stir on the stove until the mixture thickens

    9. Pour the finished jelly into mugs, serve to the table.
