In addition, kefir chocolate cake is an excellent recipe for those who do not yet dare to bake traditional biscuits (and they, as you know, require some skill).     Story

    The word "cake" has Latin roots. In ancient language "tōrta" means "round bread". Modern cakes are indeed almost always round in shape. Traditionally, this dish consists of several cakes soaked in cream. From above, the cake is decorated with the same cream, icing, mastic, sometimes fruits, berries, nuts - it all depends on the imagination and desire of the one who prepares the cake.

    Cake is a traditional festive dish at weddings, birthdays and other no less solemn events. The kefir cake, the recipe of which we are considering today, does not pretend to be called a particularly festive cake. You can’t call it refined or elegant, but this cake is incredibly cozy and just perfect for evening family gatherings.

    Ingredients

    For test:

    • Wheat flour - 300 grams;
    • Eggs - 3 pieces;
    • Sugar - 250 grams;
    • Kefir - 500 grams;
    • Cocoa powder - 2 tablespoons;
    • Soda slaked with vinegar - 2 teaspoons.

    For cream:

    • Condensed milk - 400 grams;
    • Sour cream - 500 grams;
    • Walnuts - 1 cup.

    Cooking

    1. Place the eggs in a deep bowl and beat. We draw your attention to the fact that it is not necessary to beat strongly, it is enough to beat until a not too lush foam is formed.

    2. Add sugar to beaten eggs. We continue to beat.

      Without ceasing to beat, we introduce granulated sugar.

    3. Then pour in kefir. Here we draw your attention to the fact that kefir is heavier than beaten eggs, so it immediately sinks to the bottom of the plate. The photo shows only a small spot of kefir, which very quickly covers the egg mass. We mix the dough.

      Add kefir to the dough and mix it well.

    4. We extinguish the soda with vinegar and add it to the egg-kefir mass.

      Add soda quenched with vinegar to the future test.

    5. Stirring constantly, gradually add flour. We remind you that flour must always be sifted so that it is saturated with air, and as a result, baking is magnificent.

      Without stopping stirring, sifting, we introduce flour into the dough.

    6. Add cocoa to the dough, mix well so that the mass is uniform in color and structure.

      Now add cocoa to the dough and mix again.

    7. This is the result of the dough. It is quite liquid, about the same as the dough for making pancakes.

      The dough for the cake should look like in the photo and resemble the dough for pancakes in consistency.

    8. Divide the dough into two equal parts. The best way to do this is with a kitchen scale. But, if you can’t find any in your kitchen, you can divide the dough by eye. However, a measuring cup in this matter is also a good helper. We have to bake two cakes. So, we cover the detachable form with parchment (bottom and sides separately). To cover the bottom, you can cut a circle of the appropriate size from parchment. And you can do it according to the principle of an embroidery hoop: take a square sheet, put it on the bottom, and put the sides on top and snap this design into place. We also close the sides with long rectangular sheets of parchment paper.

      We cover the detachable form with parchment, with the bottom and sides separate, and divide the dough into two parts, of which later we get two identical cakes.

    9. Bake each of the two skins until cooked at a temperature of 180C for about 35-40 minutes. In any case, we check the readiness of the cake with a wooden splinter. If it comes out of the dough completely dry, you're done. Cool the cakes completely on a wire rack.

      Each cake will be baked for at least 35 minutes at 180 degrees.

    10. While the cakes are cooling, we make cream. To do this, you just need to mix condensed milk and sour cream. We took sour cream of the lowest fat content, so our cream turned out to be quite liquid. This was done intentionally to make our cake "wet". If you like cakes that are denser in structure, you can take the fattest sour cream and boiled condensed milk. However, with the cream you can fantasize endlessly.

      The finished cakes are cooling down, and for now we will deal with the cream. For a more β€œwet” cake, mix low-fat sour cream and condensed milk, but for a drier dough structure, use boiled condensed milk and fat sour cream.

    11. Then we clean the walnuts. If you buy nuts that have already been peeled, hozOboz advises you to pre-fill them with boiling water for a few minutes.

    12. We grind nuts, but not much - we don’t need nut β€œdust”.

      Break the nuts into pieces.

    13. When the cakes have cooled, cut each into two parts. The cake turned out fluffy and fluffy.

      In the meantime, the cakes will cool down and they will need to be cut lengthwise, each into two parts.

    14. Let's start collecting the cake. We put the first cake on a wide plate, pour it with cream.

      Now we form a cake and for this we place the first cake on a plate and pour it with cream.

    15. Then sprinkle with ground walnuts.

      Now sprinkle the cream with nuts.

    16. We do the same with the rest of the cakes. Top cake is also poured with cream and sprinkled with nuts. The cake is ready, put it in the refrigerator for several hours, and then enjoy a piece of tender, β€œmoist” and very tasty cake with a cup of tea or coffee.

      Repeat these manipulations again and again until the cream and cakes run out. The surface of the cake should be generously poured with cream and put in the refrigerator for at least a couple of hours. And only then you can enjoy a piece of delicious cake with a cup of aromatic tea.
