The Italians eat cenci or chiacchiere during carnival. The finished brushwood is generously moistened with sweet orange juice with zest or anise wine is used, adding it to the dough. But Greece is considered the birthplace of brushwood. It was there that in the 15th century the first people came up with the idea of frying thinly rolled pieces of unleavened dough in hot vegetable oil. And then the recipe for these products spread throughout the world.

    Brushwood can be cooked in milk, water, yogurt, vodka or cognac can be added to the dough so that the fried product crunches more. We will tell you how to cook kefir brushwood with a photo step by step so that you can treat your family and friends with this dessert.

    Ingredients:

    • Wheat flour - 2 cups (about 400 g)
    • Chicken egg - 1 pc.
    • Kefir - 1 cup (200 ml)
    • Vegetable oil - 0.5 l
    • Sugar - 3 tbsp. spoons
    • Soda - 1 teaspoon
    • Powdered sugar - to taste

    1. Prepare all the ingredients for making brushwood on kefir.     2. In a large and deep bowl (to make it convenient to knead the dough in it), mix kefir and egg. Kefir can be taken of any fat content, it will practically not affect the taste of the dough.

    3. In a bowl where kefir and an egg are mixed, add sugar and soda, as well as 2-3 tablespoons of vegetable oil. This is done so that the dough for brushwood rolls out well and we can form products of the shape we need.

    4. The turn of flour has come. It is better to sift wheat flour through a sieve before cooking, so you get rid of unnecessary inclusions that are often found in low-quality flour, and also enrich it with oxygen. This will make our pastries more airy.

    8. In the middle of each piece, cut a hole 3-4 cm long and thread one end of the dough through it.

    10. We heat refined sunflower oil in a narrow deep bowl. It can be a heavy bottomed pot or a small pan like mine. When the oil has warmed up (this can be checked by dropping a small piece of dough into it - it begins to hiss and bubble), put 3-4 formed brushwood into it for 20-30 seconds.

    11. When the brushwood is fried on one side, turn it over with a fork to the other. We fry for another 20-30 seconds. It is important here to find the correct oil temperature so that the brushwood does not burn. But if the oil is not hot enough, then the brushwood will absorb more than it needs.

    12. Put the finished products on a plate covered with a paper towel. The paper will absorb the fat we don't need.

    13. To prepare powdered sugar, put 2-3 tablespoons of sugar in a coffee grinder and turn on the "start" for 1-1.5 minutes. You can, of course, buy ready-made powdered sugar, but why, if you cook it yourself - faster and cheaper.

      To prepare powdered sugar, pour sugar into a coffee grinder and scroll it for about 1 minute.

    14. Put the powder in a small strainer and sprinkle the brushwood with sugar in the amount that you and your children like.

    15. Serve the brushwood on the table on a large dish or board, garnished with mint leaves or served with jam or honey.
