You just need to get up half an hour earlier than your family, and by the time they wake up, the house will be filled with the aromas of fresh pastries, and literally a mountain of soft, lush and snow-white brushwood will be waiting on the table. With a cup of fragrant tea or a glass of warm milk, this breakfast will appeal to both adults and children.

    History of the dish

In many countries, such a dessert as brushwood on kefir is very popular. Lush, rich, moderately sweet fried dough products in Hungary are called csöröge and are traditionally served at weddings. The Italians eat cenci or chiacchiere during carnival. The finished brushwood is generously moistened with sweet orange juice with zest or anise wine is used, adding it to the dough. But Greece is considered the birthplace of brushwood. It was there that in the 15th century the first people came up with the idea of frying thinly rolled pieces of unleavened dough in hot vegetable oil. And then the recipe for these products spread throughout the world.

Brushwood can be cooked in milk, water, yogurt, vodka or cognac can be added to the dough so that the fried product crunches more. We will tell you how to cook kefir brushwood with a photo step by step so that you can treat your family and friends with this dessert.

    • Wheat flour - 2 cups (about 400 g)
    • Chicken egg - 1 pc.
    • Kefir - 1 cup (200 ml)
    • Vegetable oil - 0.5 l
    • Sugar - 3 tbsp. spoons
    • Soda - 1 teaspoon
    • Powdered sugar - to taste

    Cooking plan

    1. Prepare all the ingredients for making brushwood on kefir. The recipe with a photo will tell you in detail how to cook a dish in just half an hour, but for this you should have everything you need at your fingertips, because when oil is boiling on the stove, there will simply be no time to be distracted by the search for ingredients.

To make the cooking process go faster, prepare all the ingredients in advance

    2. In a large and deep bowl (to make it convenient to knead the dough in it), mix kefir and egg. Kefir can be taken of any fat content, it will practically not affect the taste of the dough.

Mix kefir and egg in a bowl for dough

    3. In a bowl where kefir and an egg are mixed, add sugar and soda, as well as 2-3 tablespoons of vegetable oil. This is done so that the dough for brushwood rolls out well and we can form products of the shape we need.

Send vegetable oil, as well as sugar and soda to the kefir mixture

    4. The turn of flour has come. It is better to sift wheat flour through a sieve before cooking, so you get rid of unnecessary inclusions that are often found in low-quality flour, and also enrich it with oxygen. This will make our pastries more airy.

      Sift flour into the dough

    5. The recipe for brushwood on kefir indicates 2 cups of flour in the ingredients. Everyone's glasses are different, and the volume and weight of flour can also be different. After adding 1.5 cups, the dough becomes firm enough to knead on the table. Sprinkle generously with flour the surface of the table and spread the dough on it.

Immediately add one and a half cups of flour, and dust the rest of the dough as needed until the desired consistency is obtained

    6. Next, gradually adding the remaining flour, knead the dough for brushwood. It will be homogeneous in consistency, dense, but not tight.

Adding flour in small portions, form the dough

    7. Next, we form brushwood on kefir. With a photo it will be much easier to understand. We cut off a third from a large piece of dough, cover the rest with polyethylene so that it does not wind. Roll out the cut dough with a rolling pin 0.2-0.3 cm thick and cut into triangles.

To give the brushwood a shape, first of all, we separate a third from the whole dough, cover the rest with a bag so that it does not wind. We roll the piece into a layer about 3 mm thick and cut it into triangles, as in the photo

    8. In the middle of each piece, cut a hole 3-4 cm long and thread one end of the dough through it.

In the middle of each triangle we make an incision about 3 cm long and pass the single end of the dough through it

    9. The size and shape of the pieces of dough is absolutely not critical. In this recipe, kefir brushwood is cut step by step first into triangles 10 cm long, and then into rectangles, as seen in the photo. And so, and so - beautiful and tasty.

What will be the size and shape of brushwood is not important at all. In our recipe there is an option in the form of triangles and rectangles - choose the one that you like best

    10. We heat refined sunflower oil in a narrow deep bowl. It can be a heavy bottomed pot or a small pan like mine. When the oil has warmed up (this can be checked by dropping a small piece of dough into it - it begins to hiss and bubble), put 3-4 formed brushwood into it for 20-30 seconds.

In a deep bowl, heat refined vegetable oil so that the brushwood in it sizzles when lowered inside. Once the oil is hot, dip 4-5 pieces into it for about 30 seconds

    11. When the brushwood is fried on one side, turn it over with a fork to the other. We fry for another 20-30 seconds. It is important here to find the correct oil temperature so that the brushwood does not burn. But if the oil is not hot enough, then the brushwood will absorb more than it needs.

As soon as the brushwood is fried on one side, turn it over to the other and cook in hot oil for another 30 seconds

    12. Put the finished products on a plate covered with a paper towel. The paper will absorb the fat we don't need.

Pre-line the plate with a paper napkin and put the finished brushwood into it. All excess fat will certainly remain on the napkin

    13. To prepare powdered sugar, put 2-3 tablespoons of sugar in a coffee grinder and turn on the "start" for 1-1.5 minutes. You can, of course, buy ready-made powdered sugar, but why, if you cook it yourself - faster and cheaper.

To prepare powdered sugar, pour sugar into a coffee grinder and scroll it for about 1 minute.

    14. Put the powder in a small strainer and sprinkle the brushwood with sugar in the amount that you and your children like.

Spray the finished powder through a sieve onto the cooled brushwood

    15. Serve the brushwood on the table on a large dish or board, garnished with mint leaves or served with jam or honey.

Serve the finished brushwood to the table on the board and decorate for flavor with fresh mint leaves with honey or jam

    16. So our brushwood is ready according to the recipe for kefir. Lush, ruddy, sweet - these pastries are worthy of the most important guests!

Well, the brushwood is ready - everything is on the table!
