Some historical facts on puff pastry

The puff pastry was invented in the late seventeenth century by french artist Claude Laurent, one of the greatest masters of a classical landscape. The puff pastry can be yeast or fresh one. Anyway, in addition to flour, its main component is fat of different kinds (usually - butter, sometimes - margarine). Dough lamination is achieved due to the contents of individual layers of fat that at room temperature no longer be liquid.

During the preparation of thin layers alternate with layers of fat, resulting dough is rolled and folded several times in order to increase the number of layers. Preparation of such a dough is a very time consuming activity, as it should be rolled out very thin and without any tears. The dough should be cool, so it is chilled upon the completion of each layer.

By the way, confectioners refer to as "puff" not only cakes, but also the puff pastry. For example, "to make puff" means nothing else but to make a puff pastry.

Puff pastry cherry turnovers recipe with photos - preparation:

    1. First of all we need to defrost the puff pastry since it is usually sold frozen. Keep it on the table for about 30-40 minutes or as long as directed on the package. Cut the dough into 12 equal rectangles. However, you may have less pieces if you want to cook larger puffs.

Unfreeze the puff pastry for 30-40 minutes and divide it into 12 equal parts or more.

    2. Each piece of puff pastry should be visually divided in two. Make small incision in the first part using knife as shown in the picture. The incisions should be placed approximately in the middle and should not reach the edges.

Visually divide the rectangle into two parts and one of them will have small incisions in the middle.

    3. Unfreeze cherries too, pour off. You may also use fresh ones if it’s summer, of course. But you may have puff pastry cherry turnovers any season if you use frozen fruits.

      Unfreeze and wash the cherries.

    4. Combine sugar with cherries and mix.

Peeled cherries should be combined with sugar.

    5. Do not wait until the cherries release the juice, and immediately spread it on the dough, and more specifically - on the part where no cuts.

As long as the cherry would not let the juice, spread it on the part of the rectangles in which no incisions.

    6. Sprinkle cherries with starch so that the cherry juice won’t release from the turnovers. Starch plays the role of a ‘lock’ preventing the juice from release.

The cherries should be covered with starch so that they will not release excess juice.

    7. Cover the filling with pieces of dough with incisions, but dough should be lubricated with water on the inner edges. Use the fork to make the «patterns" just like the photo shows.

Then cover cherries with another part of dough and fora a special pattern using fork.

    8. Place the puff pastry turnovers on the over-tray covered with parchment.

Cover the over-tray with parchment and place the pastries there.

    9. Beat and egg and grease each turnover with it.

Grease each of them with a beaten egg.

    10. Bake them for 15 minutes (or as long as indicted on the package of pugs pastry) at 400F.

Keep them in the oven for approximately 15 minutes at 400F.

    11. Then put  them in the in a sealed container or any other closed dish, so they will be soft and crunchy at simultaneously. You may serve them cold as well as hot, it doesn’t really matter because in both ways, they’re extremely delicious!
