    The dish is beloved worldwide, but at the same time it’s rather difficult to cook it right. In order to make your pork tasty, not only the recipe is important but also your great mood. So, let’s just focus and begin cooking our homemade boiled pork. But first a few words on the history of the original baked pork recipe.

    History of baked pork

    Boiled pork is a piece of meat cooked in a special spicy mixture of pepper and spices and entirely baked in the oven at a certain temperature. Usually, for the preparation of this dish the pork is used, while lamb or beef are used rather seldom. Another distinguishing feature of this particular meat delicacy is the structure because it should not be too fatty. That’s the reason why boiled pork is usually prepared of sirloin on the bone or without it. Regarding geographical origin, the baked pork is considered to be a part of Russian cuisine, although similar culinary refinements are present in cookbooks of Austria, Germany and Quebec. The most important thing is the understanding that solid piece cooking is the key, while marinade and cooking time are up to you.

    Regardless of the country, many chefs know how to cook boiled pork but the tips for this are understandable not for everyone. In general, cooking meat is definitely not for everyone. In order to make the process more understandable and closer to you, we have prepared this review. And the first thing we want to pay special attention are the basic rules and tips that will make your homemade baked  pork particularly tasty.

    • To cook baked pork at home, it is recommended to use fresh meat, not frozen. The fact is that it is juicier and more flavorful;
    • The meat should be marinated for not less than 10 hours, or just leave it overnight. Moreover, the first meat should stay at room temperature for at least 3 hour and only then to complete the process it must be placed in a refrigerator;
    • To ensure that the meat is well marinated, it’s necessary not only to smear it with a mixture of herbs and spice but to make small incisions with a knife and place the meat in the marinade. However, it is important not to cut it too much or the incisions  will be too deep in the process of baking. If so, you risk losing precious juices and get a dry piece of meat. But it must necessarily be juicy;
    • Regardless of tastes, baked pork suggests a few classic ingredients without which you can’t make one. These ingredients are: bay leaf, garlic and black pepper. The others are optional but these components are necessarily required;
    • Do not ignore the cooking time and temperature. It is important to keep pork in the oven at the same temperature because it loses juice and flavor if t’s changed

    Now you know everything you need to make baked pork according to our original recipe. So let’s move to the preparation itself.


    • about 1.5 - 2 kg of Pork fillet on the bone
    • 9 pcs. of Bay Leaf
    • 6 cloves of garlic
    • 3 tsp spices for the meat
    • salt

    How to cook baked pork at home:

    1. First, prepare all the necessary products;

      To start, prepare all the products you'll need for the preparation of pork.

    2. Use a coffee grinder or blender to grind bay leaves;

      Bay leaf should be ground to a fine powder.

    3. Now, having prepared all the marinade ingredients, the host for their mixing;

      Prepare the marinade.

    4. In a bowl, combine the bay leaf powder, crushed garlic, spices and salt;

      Ground bay leaf should be combined with salt, spices and garlic to prepare marinade.

    5. Now use the knife to make not deep incisions on the meat;

      Using a sharp knife, make incisions in the meat, but not very deep.

    6. Put a little marinade inside each incisions;

      Fill each incision with marinade.

    7. These cuts must be made for 10-12 cm;

      If you want to marinate meat better, it is necessary to make such10 cm cuts.

    8. When all the meat is filled with spices, it must be put in a tray or bowl with a lid and left to marinate for at least 10 hours;

      Greased meat goes to a bowl or pan with a lid and is left to marinate for 10 hours or more.

    9. Now, the meat should be placed on the cooking grid so that it does not touch the oven tray;

      Meat should be baked on the grid, so that it does not touch the pan and excess fat can drain freely at its bottom.

    10. Bake the meat at a temperature of 400F for approximately 40 minutes. Then, the meat must be removed, turned and greased with the excess juice.

      Put the meat in the oven and bake it for 40 minutes at 400F. At the end of the first stage the meat must be removed from the oven and pour the released juice. Then you need to turn the boiled pork and lubricate with this juice using a brush.

    11. The meat is then sent back into the oven and baked until done.

      Now, boiled pork again is sent to the oven and baked until cooked.

    12. To check if the meat is ready you need to pierce it with a sharp knife and make sure the reddish ichor does not flow from it. However, many people love half cooked meat.

      Check readiness of the dish by making a puncture in the thickest part and make sure that nothing flows out of it.

    13. Baked pork, as shown on our photo  is an example of half-cooked dish. A perfect garnish for this meat would be vegetables and mashed potatoes;

      We decided to cook medium rare baked pork. Serve with vegetables or, for instance, mashed potatoes.
