    In this review we’ll talk on the preparation of cutlets in breadcrumbs. It may seem not tough at all, but in each case there are subtleties and that’s not easy to fry great burgers in breadcrumbs. Our task is not to just tell you the recipe, but also to reveal its secrets. But first a couple of words about the history of the cutlets and healthy features of this wonderful dish.

    The history of cutlets

    The first thing to mention about the cutlets is their diversity. In other words, each country has their own recipes. Originally, the word ‘'cutlet'' has derived from French ‘’cotelette’’(rib). Therefore, the essential part of such a cutlet is a bone. Of course, today it’s rather surprising to see a cutlet with a bone. But in Europe it’s widely spread, especially the one rolled in breadcrumbs. The next stage in the development of the dish was beaten cutlets. Only the tenderest part of a loin of beef, pork or chicken was used for this.

    The cutlets made of mincemeat were cooked in Russia only at the end of the nineteenth century. At that time, forcemeat for meatballs was literally cut with a knife grinder. Usually eggs, soaked bread, onion was added to the meat. There were other products which gave some flavor to the meat like spices, seasonings, herbs, etc. It was only with the advent of grinder that cutlet acquired its present appearance and taste. Well, that’s all for now about history, let’s discuss the advantages and health benefits  that cutlets in breadcrumbs recipe gives us.

    Healthy features of the dish

    First of all, like any other meat dish, cutlets are excellent in prevention of anemia. They contain a lot of vitamin B12 - essential vitamin which is responsible for the production of hemoglobin. Meat cutlets are rich in vitamin PP which does not allow to develop a vitamin deficiency and protects you against disorders of the brain. Vitamin K is important for your bones as well as calcium and phosphorous. On the other hand, cutlets is a fried dish and it means that carcinogens occur during cooking. However, if you cook  cutlets with breadcrumbs not that often, it doesn’t threaten you. Well, let’s now proceed directly to the preparation of our dish. Here you go, the cutlets in breadcrumbs and their recipe with photos.

    Ingredients needed for 25 average pieces (cutlets):

    • 1 kg of pork neck
    • 1 onion
    • 1 egg
    • 1 potato
    • a 2 cm slice of bread
    • 100 grams of cream
    • 200 grams of breadcrumbs
    • salt
    • spices and herbs
    • vegetable oil

    How to cook breaded cutlets:

    1. Prepare the main products;

      Prepare the ingredients needed to cook cutlets.

    2. Pass the pork through the mincer twice, then do the same with onions;

      With mincer, grind meat and add onions to it.

    3. Soak white bread in cream and also pass it through a mincer;

      Twist in pre-minced meat white bread soaked in cream.

    4. Add an egg to the minced meat;

      Break na egg in the forcemeat.

    5. Add some salt now;

      Add a pinch of salt.

    6. Now it's time to spice the cutlets;

      Minced meat should be seasoned.

    7. Peel and rub a potato on a fine grater;

      Potato should be cleaned and rubbed on a fine grater. 

    8. Add the potatoes to the minced meat;

      Combine potatoes with meat.

    9. Thoroughly mix and beat the mince in a bowl;

      Manually mix all the stuffing ingredients and beat the meat throwing it 5 times in a bowl.

    10. That’s how the minced meat for cutlets should look like;

      In accordance with the photo, you should have such a mince for your cutlets.

    11. On one side of the bowl put a plate with water, on the other - with spiced and salted breadcrumbs;

    12. Wet your hands so that cutlets do not stick;

      Do not touch the cutlets with dry hands.

    13. Now, take some minced meat and shape a cutlet;

      Give it the shape of cutlets.

    14. To get a real burger push on it, as shown in the photo;

      Push it between the palms.

    15. Drop a cutlet in bread crumbs;

      Roll the cutlet in breadcrumbs.

    16. Now turn it over and do the same thing on the other side;

      Overturn the cutlet and do the same.

    17. In a large frying pan with a lid, heat some vegetable oil;

      Put a pan  with oil on the heat.

    18. Fry cutlets on a high heat until golden brown and turn them over;

      Fry  the cutlets on both sides.

    19. Fry the cutlets on the other side, then cover them with a lid, reduce the heat to low and cook cutlets about 8-10 minutes;

      You need to fry them a little, then cover the pan with a lid and keep them on a low heat for a minimum 8-10 minutes.

    20. It's time to serve hot  breaded cutlets, which should look exactly as in the photo, with aromatic vegetables and herbs!

      Ready-made cutlets with breadcrumbs (just like on the picture) should be served right now, preferably with a salad.
