    The history of Khachapuri

    Like many other Caucasian dishes, its history expands to centuries. Indeed, the whole kitchen of the Georgian people is shrouded in a veil of secrecy, impregnated with aromas of herbs and scents of hot spices. Well, since bread is known to be the most important ingredient of local cuisine, khachapuri is a key element of any Caucasian feast. That is why there are so may options for khachapuri recipes. The word khachapuri comes from a tandem of Georgian  "hacho'' ‘(cottage cheese) and ‘’puri'' (bread), or just bread with cheese or curd. Of course, for many years, other fillings became popular like meat, mushrooms or beans.

    The strange of Ajarksi khachapuri’s shape is believed to be given by the sailors who lived in the coastal areas of the country, and the egg, which is usually split into ready khachapuri according to traditional recipe, symbolizes the sun. There also a pie resembling khachapuri with egg. This cake almost copied the appearance of our today’s dish. That’s all for now on history. Let’s move to the healthy features of the dish and say  a few words about its benefits.

    'What may be healthy in khachapuri with cheese?' - you may ask.

    First of all, just as white bread, khachapuri contains vitamin B, which undoubtedly has a positive effect on the nervous system and the general state of a body. In addition, due to the vitamin content, the dough strengthens your immune system. It also contains a lot of calcium, iron and phosphorus which has a lot to do with healthy teeth, nails and hair. Thanks to protein our body receives a lot of important amino acids including lysine and methionine. Indeed, we actually need bread for normal digestion of food, especially those of us who suffer from gastritis.

    The benefits of cheese do not need any presentation because of vitamins, calcium and phosphorus. In addition, all the substances contained in the cheese are immediately assimilated by human body. It’s no accident that Caucasus region is filled with long-livers, they just know exactly what and when they should eat. Chinese wisdom says "We are what we eat''. Therefore, all doubts aside and let’s start  cooking Adjarski khachapuri - here's our recipe with photos!

    Ingredients for khachapuri:

    • 6 cups of water
    • 2-2.5 kg of flour
    • 2 tbsp. of salt
    • 2 tbsp. of sugar
    • 60 grams of vegetable oil
    • 11 grams of yeast
    • 200 grams of Suluguni cheese
    • 400 grams of Imeretian or adegeysky cheese (you may use only suluguni, intros case you need about 500 g)
    • 5-6 egg yolks
    • 100 grams of cream

    How to prepare for Adjarski khachapuri:

    1. First of all, prepare the dough for khachapuri. To do this, combine a cup of warm water, yeast, salt, sugar in a ceramic dish and leave to ferment for 15 minutes;

      To make the dough, connect and mix a cup of warm water with sugar, yeast and salt, and then leave it for about 15 minutes.

    2. After 15 minutes, pour the yeast mixture into the bowl;

      It’s time to pour into a large bowl the yeast mixture.

    3. Add 5 cups of warm water to the yeast and all carefully stir;

      Mix the yeast and the remaining 5 cups of liquid.

    4. Now, start adding the four carefully so as not to thicken the dought;

      Add the flour slowly, but remember that it gradually thickens and watch that the dough does not get too tight.

    5. Lay out knead dough on the table and knead more adding vegetable oil simultaneously;

      In order to make the dough softer. lay it on the table and add small portions of vegetable oil, thoroughly kneading it.

    6. Then we re-lay the dough in a deep dish and leave it for about 1 hour in a warm place. When the dough is ready, its size will increase by 2-2.5 times;

      Keep the dough in a warm place for an hour, and as a result it increases twice in size.

    7. Tear a small piece of the dough give it the shape of a rectangle 0.7 cm thick;

      Roll out a dough rectangle not more than 7 mm thick.

    8. Then, on both sides place grated Imereti, adegeysky or suluguni cheese and turn the edge as shown in the photo;

      On each side of the rectangle, put some cheese and turn the edges.

    9. Connect right and left edges of the form and give it the shape of boat. Spread khachapuri on an oiled oven tray;

    10. Before you put the dough in the oven grease it with a mixture of egg yolk and cream. Bake hachapuri be at 440F for 12-15 minutes, depending on the size;

    11. That's all for now - khachapuri is ready, give it a breath for about 5 minutes and serve. If you decide to add an egg, it should be done a minute before getting khachapuri from the oven.
