Like many other Caucasian dishes, its history expands to centuries. Indeed, the whole kitchen of the Georgian people is shrouded in a veil of secrecy, impregnated with aromas of herbs and scents of hot spices. Well, since bread is known to be the most important ingredient of local cuisine, khachapuri is a key element of any Caucasian feast. That is why there are so may options for khachapuri recipes. The word khachapuri comes from a tandem of Georgian "hacho'' ‘(cottage cheese) and ‘’puri'' (bread), or just bread with cheese or curd. Of course, for many years, other fillings became popular like meat, mushrooms or beans.
The strange of Ajarksi khachapuri’s shape is believed to be given by the sailors who lived in the coastal areas of the country, and the egg, which is usually split into ready khachapuri according to traditional recipe, symbolizes the sun. There also a pie resembling khachapuri with egg. This cake almost copied the appearance of our today’s dish. That’s all for now on history. First of all, just as white bread, khachapuri contains vitamin B, which undoubtedly has a positive effect on the nervous system and the general state of a body. In addition, due to the vitamin content, the dough strengthens your immune system. It also contains a lot of calcium, iron and phosphorus which has a lot to do with healthy teeth, nails and hair. Thanks to protein our body receives a lot of important amino acids including lysine and methionine. Indeed, we actually need bread for normal digestion of food, especially those of us who suffer from gastritis.
The benefits of cheese do not need any presentation because of vitamins, calcium and phosphorus. In addition, all the substances contained in the cheese are immediately assimilated by human body. It’s no accident that Caucasus region is filled with long-livers, they just know exactly what and when they should eat. Chinese wisdom says "We are what we eat''. To make the dough, connect and mix a cup of warm water with sugar, yeast and salt, and then leave it for about 15 minutes.
It’s time to pour into a large bowl the yeast mixture.
Mix the yeast and the remaining 5 cups of liquid.
Add the flour slowly, but remember that it gradually thickens and watch that the dough does not get too tight.
In order to make the dough softer. lay it on the table and add small portions of vegetable oil, thoroughly kneading it.
Keep the dough in a warm place for an hour, and as a result it increases twice in size.
Roll out a dough rectangle not more than 7 mm thick.
On each side of the rectangle, put some cheese and turn the edges.
Connect the edges and give them the shape of the boat. Place khachapuri on an oiled oven tray.
Before baking khachapuri, grease it with yolks and cream mixture, then place in oven preheated to 440F for about 13 minutes.
If you want to add an egg, do it a minute prior the dish is ready, so that the yolk remains liquid and you can eat it together with slices of hot bread. And now our dish is finally ready!
